Erwtensoep (Dutch Pea Soup)

Ingredients

  • 1 ¾ liter - water
  • 300 gram - dried green split peas
  • 100 gram - pork belly or thick-cut bacon
  • 1 - pork chop
  • 1 - bouillon cube
  • 2 ribs - celery
  • 2–3 - carrots
  • 1 - potato
  • 1 - onion
  • 1 - leek
  • 1 cup - celeriac
  • 1 pound - smoked sausage
  • salt
  • black pepper

Instructions

  1. Bring water, split peas, pork belly or bacon, pork chop, and bouillon to a boil.
  2. Reduce heat, cover, and simmer for 45 minutes, stirring occasionally.
  3. Remove, debone, and slice the pork chop.
  4. Add celery, carrots, potato, onion, leek, and celeriac.
  5. Simmer uncovered for another 30 minutes.
  6. Add smoked sausage during the final 15 minutes.
  7. Remove and slice the meats.
  8. Purée the soup if desired and season with salt and pepper.
  9. Return the meat to the soup and serve garnished with sausage.
