    1. Strain butter beans, but reserve liquid; set aside.
    2. Melt butter and olive oil in a saucepan over medium heat until sizzling. Add onions and sauté until softened, about 2 minutes. Add garlic and stir just until garlic is fragrant, about 30 seconds.
    3. Add lemon juice, lemon zest, and Dijon mustard to saucepan, stirring until well combined. Stir in the beans, and add some of the reserved bean liquid until you reach your preferred consistency. Reduce heat to a simmer, cover, and cook until beans are heated through, 4 to 5 minutes.
    4. Season with salt and pepper, sprinkle with chopped parsley, and serve.
