
Menemen
Menemen is a Turkish breakfast dish: scrambled eggs, spices, tomatoes. Simple! It’s the most comforting of all ways to start – or end – the day. The key is to add the eggs off the heat, so that they cook gently in the residual warmth of the pan. Serve with buttered toast or a leafy salad with slices of avocado

Ingredients
- 4 - eggs
- 3 tablespoon - olive oil
- 1 - onion
- 3 cloves - garlic
- 1 teaspoon - cumin seeds
- ½ teaspoon - Aleppo chilli flakes
- ½ teaspoon - ground cinnamon
- ½ tablespoon - tomato paste
- 300 gram - cherry tomatoes
- 1 tablespoon - double cream
- 5 gram - coriander leaves
- Fine sea salt
Instructions
- Put the eggs into a bowl with half a teaspoon of salt.
- Lightly beat, just to break up the yolks, and set aside.
- Put the oil into a medium frying pan on a medium-high heat.
- Add the onion and garlic and cook for five minutes, stirring a few times, until softened and starting to colour.
- Add the spices, tomato paste and an eighth of a teaspoon of salt and cook for two minutes, until fragrant.
- Add the tomatoes and 60 ml of water, then cook, uncovered, for 10 minutes until the tomatoes have broken down.
- Squish them with the back of a spoon if they need a bit of help.
- Remove from the heat and swirl in the eggs, using a wooden spoon or spatula and moving the pan gently until just set.
- Spoon over the cream, sprinkle over the coriander and serve straight from the pan.
