Menemen

Menemen is a Turkish breakfast dish: scrambled eggs, spices, tomatoes. Simple! It’s the most comforting of all ways to start – or end – the day. The key is to add the eggs off the heat, so that they cook gently in the residual warmth of the pan. Serve with buttered toast or a leafy salad with slices of avocado

  1. Step 1

    Put the eggs into a bowl with half a teaspoon of salt.

    Lightly beat, just to break up the yolks, and set aside.

  3. Step 3

    Put the oil into a medium frying pan on a medium-high heat.

  4. Step 4

    Add the onion and garlic and cook for five minutes, stirring a few times, until softened and starting to colour.

    Add the spices, tomato paste and an eighth of a teaspoon of salt and cook for two minutes, until fragrant.

    Add the tomatoes and 60 ml of water, then cook, uncovered, for 10 minutes until the tomatoes have broken down.

  7. Step 7

    Squish them with the back of a spoon if they need a bit of help.

  8. Step 8

    Remove from the heat and swirl in the eggs, using a wooden spoon or spatula and moving the pan gently until just set.

  9. Step 9

    Spoon over the cream, sprinkle over the coriander and serve straight from the pan.
