Beef Sliders With White Cheddar + Bacon

Heat grill on high for 10 minutes, and then lower the heat to medium to cook the burgers. Divide ground beef into 6-8 equal chunks. As a meal, 6 sliders will feed 2-3 people. For appetizers, 8 sliders will feed 4-8 people. Flatten each chunk of beef into a patty, indenting the middle (this helps maintain the size and juiciness of the patty). Sprinkle with seasoning. Cook patties for about 3 minutes per side.

To assemble, spread BBQ sauce on the buns, and top burgers with cheese, bacon, greens, or toppings of choice

In a heavy saucepan, heat oil over medium-high until it shimmers. Add onion and garlic, and saute until the onion is soft and browned on the edges. Stir in the peaches, and saute until some of the juices release, about 2 minutes. Meanwhile, whisk remaining ingredients together in a medium bowl. Add the mixture to the peaches and onions and reduce heat to medium-low. Simmer for about 15 minutes, or until the mixture thickens a little.

Let the mixture cool for a few minutes and blend until smooth.
