Instructions
1
|
Pan - Lightly grease a 20cm/8" square pan with butter then line with baking paper (parchment paper) with overhang (to make it easier to lift out later).
2
|
Reserve toppings - Set aside 8 or so of the nicest glacé cherries. Finely chop 1 tablespoon of the pistachios.
3
|
Melt chocolate – Place chocolate and oil in a heatproof bowl. Microwave in 30 second increments, stirring in between, until melted and smooth.
4
|
Add-ins – Stir the Add-ins into the chocolate. Pour into pan, spreading out evenly - I also like to bang and shake the pan assertively (also very satisfying!).
5
|
Top with reserved glace cherries and sprinkle with chopped pistachios.
6
|
Refrigerate for 3 hours or until firm. Lift out of the pan using the paper overhang, then cut! I cut into 5 lines, then into chunks for eating or larger pieces for gifting!

Tips & Tricks (5)
- Chocolate Melting Mastery 🍫Use a double boiler or microwave in 30-second intervals, stirring between each burst to prevent scorching and ensure smooth, glossy white chocolate.
- Cherry Cutting Technique 🍒Halve the glacé cherries before mixing to distribute color and flavor more evenly throughout the rocky road, creating a more balanced bite.
- Oil Emulsification Trick 💧The grapeseed oil isn't just for shine - it helps prevent chocolate from seizing and creates a more fluid coating that allows ingredients to suspend perfectly.
- Toasting Nut Perfection 🥜Toast pistachios in a dry skillet over medium heat for 3-4 minutes, constantly moving them to prevent burning and enhance their natural nutty flavor.
- Setting and Cutting Hack 🔪Line your pan with parchment paper with overhanging edges for easy removal, and use a warm knife dipped in hot water to create clean, precise cuts.
